So tonight after work I went for a bike ride thinking that I was going to cook a little basmati rice, black beans with red onion and cilantro. Then I stopped by Trader Joe’s(big surprise?) and picked up some sun dried chicken sausage thinking I would cook it up tomorrow.
Well, after my bike ride I was hot and I didn’t want to cook rice. I looked in my food drawer and saw Pappardelle, and boom my inner Italian kicks in. So I cooked the pappardelle, diced the chicken sausage, heated it in a pan with garlic, butter salt and pepper. Later I added a splash of white wine to the sausage and mixed olive oil, balsamic vinegar, whole grain mustard and cayenne in separate bowl. When the pappardelle was finished I added the oil-balsamic mix to the sausage, drained the pasta mixed it in with the sausage and stirred.
It was very tasty and very easy.
